Workout 11 and 12 Question

Hey guys,

For the last 2 workouts where you do the descending sets:

10,8,6,4,3,1,1 - what kind of weight are we using to work up to that 1 rep max. For instance, do I do my 10 rep max followed by my 8 rep max weight, etc, etc or do we keep it moderate until the last set? Or is the weight kept the same until the last set? Hoping one of you guys can clear this up for me.

Also, we only pick one hold and one movement for each of these workouts correct? We don't do all of them like we previously did right?
